Okra Fried Rice

Ingredients 
  • 2 tsp. olive oil
  • 1 lb. okra, sliced
  • 3 oz. red bell pepper, chopped
  • 3 oz. sweet onions, chopped
  • 1 Tbs. fresh sweet basil, minced
  • Pinch of cayenne pepper
  • 4 cups cooked brown or white basmati rice
  • 1 Tbs. wheat-free tamari sauce
  • 1 cup tomatoes, chopped
Directions 

Pour olive oil into a skillet heated to medium, then add the next five ingredients. Sauté until al dente (about three minutes). Add the rice and tamari sauce, and blend. Garnish each serving with tomatoes.
